Jack began his career as a chef working in 115 restaurants honing his culinary craft. He learned a new skill. A Greek short order chef taught him how to sauté. Chef Charlie Yu, Chaing Kai-Shek’s former chef, showed him about knives and presentation. In addition, Jack learned classical French technique, as well as discipline, at Washington’s bastion of French cuisine, Le Lion D’Or.
He later got proficient at every station in the kitchen of Jean-Pierre Goyenvalle. He as well got some of the rudiments of French technique from one of Marriott’s top chefs, Dietmar Salat. He later relocated to Philadelphia in 1984 to continue his culinary profession at the world-renowned Le Bec-Fin. In 1987 after being inspired but his colleague and friend, Georges Perrier, he opened his first restaurant Down Home Diner at the Reading Terminal Market.
He then became famous for his unique and inventive dishes like cornbread pizza with Tennessee ham and chicken-fried buffalo steak with red-eye gravy. In 1989, he opened Jack’s Firehousein the Fairmount area of Philadelphia featuring “haute country” cuisine. Everything served in his restaurants, from mayonnaise, and ketchup, to biscuits and chocolate chip cookies.
He uses products that are locally grown and raised and invest in local farms and greenhouses getting best vegetables and herbs all year round. In the early 2010s, Jack sold the Firehouse and retired. H elater made his first national appearance at the Food & Wine Classic in Aspen, Colorado, and was named one of the “Best Chef’s in America” by the magazine.
He has got six invitations to cook at the James Beard House in Manhattan which the culinary equivalent to playing Carnegie Hall. In 1996, he was a co-host of the Food Network program, Grillin and Chillen, Alongside Bobby Flay. In 2014, he reunited with his former co-host for an episode of Beat Bobby Flay. Ingredients:
- 5lbs of Beef Brisket
- 1 TB of Olive Oil
- 2 T of Salt
1 TB of Black Pepper - 3lbs of Shiitake Mushrooms – de-stemmed
- 1 Cup of Diced Carrot
- 1 Cup of Diced Celery
- 2 Cup of Diced Onion
- 1 t of Dry Thyme
- 3 Bay Leaves
- 1 Cup of Red Wine
- 24 Ounce Can of Tomatoes
- ½ Cup of Diced Potatoes
- ¼ Cup of Orange Zest
- 2 Tablespoons of Lemon Zest
Method of Preparation:
Preheat Oven to 275 degrees. Pre Heat Cast Iron Pan. Pour oil into the pan and sear deep brown meat. Remove Meat onto Plate. Saute Carrots, Celery and Onions until onions are translucent. Remove vegetables and saute mushrooms until wilted – remove to plate. Place Meat in Pan (or Pot), vegetables on top. Add wine and spices.
Cover and cook for 1 ½ Hour. Add Mushroom and tomato and potatoes, orange and lemon zest. Cook for 1 ½ hour. Remove Meat and Mushrooms. Puree all vegetable mix and season. Cut brisket. Place mushrooms on top. Add gravy.
