Williamson started off her culinary career as a teacher’s assistant at the Epicurean Institute of Los Angeles, she then got her first kitchen position
as a pastry assistant at Fenix at the Argyle Hotel, working under the tutelage of Michelin-starred Chef Ken Frank. She later met Chef Michael McCarty’s nationally acclaimed restaurant Michael’s of Santa Monica, where she worked her way up from line cook to being their youngest sous chef.
She then staged at the renowned Daniel restaurant by Chef and Owner Daniel Boulud in New York City. She was then appointed her first executive chef position at the notable Los Angeles restaurant Boxer. She then opened the Brentwood eatery Zax as Executive Chef, where developed her signature California-inspired cuisine—infused with local ingredients, global flavors, and centered around the idea that simplicity goes a long way. While at Zax, where she met her husband and business partner Nick Roberts.
The pair opened their first independent venture together a couple of years later, Amuse Café in Venice, then opened Beechwood restaurant soon after, earning them the title of “Rising Star Chefs” from StarChefs in 2004. In 2009, the pair team opened Hudson House, an elevated gastropub in Redondo Beach, followed by The Tripel in 2011, a modern American and craft beer dining destination in the neighboring beachfront community of Playa del Rey.
She later became certified by The Court of Master Sommeliers, for her strong interest in wine that first sparked in the early 2000s after having traveled extensively through France and Spain. The pair debuted a unique four-in-one-concept, Playa Provisions, featuring a grab-and-go marketplace, King Beach; an artisanal ice cream shop, Small Batch; a seafood dining spot, Dockside; and an intimate whiskey bar, Grain in 2014. Alongside her husband, they opened Triple-Kit, a culinary-focused retail store, selling unique kitchen gadgets, cookbooks, and other cooking essentials.
The pair later opened their fifth venture in Playa Vista, a fast-casual, Hawaiian concept called Da Kikokiko, celebrating Hawaii’s popular street foods, including poké, shave ice, and musubi. Most recently, the couple opened their second Small Batch artisanal ice cream shop in the family-friendly neighborhood of Mar Vista in 2016. She later won Bravo’s “Top Chef” Season 14 in Charleston in March 2017 and a few years prior was a runner-up on “Top Chef” Season 10 in Seattle, which catapulted her career.

After much deliberation and acceptance of our state of complete uncertainty, it is with heavy hearts that we have decided not to reopen The Tripel… After 10 incredible years, we are left in this moment where normal operations are impossible. We have come to the end of our lease, our landlord is selling the building, and compiled with the health and safety concerns in the communal layout of our dining room, we are left in a state of uncertainty that outweighs the possibilities for new lease term negotiations. The Tripel has brought so much joy and an overwhelming sense of community to our lives and to our neighbors, but at the same time, this business decision needs to be made without emotion. If it were left to just that, The Tripel would exist forever… regardless of how you pronounce our name 😉 We want to thank you all for your support over the past 10 years… It is because of you all that The Tripel was able to exist to in the first place. Over the past decade we have served as the home of multiple first dates that resulted in proposals and later entire families… meetings that flourished into careers… casual side by side drinks that grew into lifelong friendships… Staff that will love and know each other forever (not to mention the marriages and families within that circle). Hudson was 2 years old when we opened our doors, and now, at the age of 12, he too will say goodbye to such a massive slice of his childhood. We found our place in the little town of Playa Del Rey, and a huge piece of us will always remain at 333 Culver BLVD. We have hopes that one day we will be able to find a home again for The Tripel… but for now, Nick and I would simply like to say thank you. Thank you for having the faith in us, for sharing your time, your blood, sweat and many tears, and for helping us say a loving goodbye with our heads held high… knowing that we’ve played a part in providing some good food, friendly faces, and life lasting memories.
