Weitsman is an American is best known for his professional careeer as an entrepreneur. He built up an interest in the processing side of scrap metal recycling, which later led to the foundation of Upstate Shredding. In the year 1997, Weitsman opened Upstate Shredding at the Tioga County Industrial Park in Owego.

- Adam opened Upstate Shredding at the Tioga County Industrial Park in Owego, NY in 1997. In the late 1990s, the company was in danger of bankruptcy after business investments were made during a lagging metal industry.
- Adam, in 2004, served eight months at Otisville Federal Prison in New York, then another two and a half months in a halfway house for kiting checks during the company’s financial struggles that started in 1998.
- Later in 2005, he acquired Upstate Shredding’s sister company, Ben Weitsman & Son, Inc., after his father retired, and later in December 2009, he acquired an 11-acre scrapyard in Solvay, NY from Peter Matlow for $225,000.
- By the end of the year 2009, Upstate Shredding was the biggest privately owned scrap business on the East Coast. In March 2010, Upstate Shredding received Tioga County’s Business of the Year award.
- Adam acquired a number of scrap companies and additional properties, including a bankrupt scrap yard in New Castle, PA, between the years 2012 and 2016. By the end of 2016, the properties and companies were collectively known as Upstate Shredding – Weitsman Recycling.
- That same year, Adam won the Platts Industry Leadership Award and the AMM Scrap Company of the Year award for the second year in a row.
- Later in May 2018, a U.S. District Judge found a former Weitsman Recycling employee guilty of defamation. The former employee had spread false claims about Adam online and was ordered to stop.
