Kaelinbegan his career when he joined the university, he started a talk show and hosted a game show on campus TV. After moving to Hollywood, he acted in movies like Beach Fever and Night Shadow. He made cameo appearances on TV shows such as MADtv, We Regret to Inform You and Mr In the year 1995, and Show with Bob and David.

He has been the host of the radio show KLSX and created content for National Lampoon. A poker aficionado, he participated as a host, in three seasons of this pay-per-view strip poker show where he had to interview the defeated players. He has had his own talk show since labeled Tailgating with Kato. He was even seen on several episodes of X-Play which was a TV show that reviewed video games. “In my opinion, yes, I think he’s guilty,” Kaelin told Walters in a preview of the interview given to “Nightline.” “In hindsight of everything, like 20 years later, I think that O.J. Simpson is guilty.”

After Simpson was acquitted, the cover of an issue of the tabloid newspaper National Examiner featured a photo of Kaelin without his shirt on, with the headline “Cops think Kato did it!” The article within the issue alleged that police suspected Kaelin of perjury.

Kaelin sued the publisher, Globe Communications, for libel, alleging that the cover headline implied he was suspected of the murders. The federal District Court for Central California dismissed the case, saying the story was not libelous or malicious. This was reversed by the US Court of Appeals for the Ninth Circuit, which ruled:

We hold that reasonable jurors could find that clear and convincing evidence established:  the front page headline falsely insinuated that the police believed that Kaelin committed the murders, and the false insinuation was not necessarily cured by.

The decision was a landmark case in libel law, finding that a headline could be considered libel. Kaelin later settled the US$15 million lawsuits with Globe Communications out of court.
